Matcha Granola

Ingredients

  • 3 cups rolled oats
  • 1/2 cup nuts (almonds, walnuts, or pecans work well)
  • 1/2 cup seeds (such as pumpkin seeds or sunflower seeds)
  • 1/4 cup shredded coconut (optional)
  • 2 tablespoons matcha green tea powder
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil (or another oil of your choice)
  • 1/3 cup honey or maple syrup (for a vegan option)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, nuts, seeds, shredded coconut, matcha powder, and salt. Mix well to ensure the matcha is evenly distributed.
  3. Combine Wet Ingredients: In a small saucepan, gently heat the coconut oil and honey (or maple syrup) just until warm. Add vanilla extract and mix well.
  4. Combine Wet and Dry Ingredients: Pour the liquid mixture over the dry ingredients and stir until everything is well coated.
  5. Bake: Spread the granola mixture evenly on the prepared baking sheet. Bake for about 25-30 minutes, or until the granola is lightly golden. Stir the granola every 10 minutes while baking to ensure even cooking.
  6. Cool and Store: Allow the granola to cool completely on the baking sheet. It will crisp up as it cools. Once cool, store in an airtight container at room temperature.
